September Recipe
Curry Chicken
Pita Pockets
Ingredients
For the sauce:
1 cup sour cream
1 tsp. dijon mustard
2 tbs. mango chutney
1 tbs. curry powder
2 tsp. orange juice
(this makes a lot of sauce)
For the sandwich:
whole wheat pita pockets
(or wraps also work well)
cooked chicken breast--
cut into strips
lettuce
bell pepper strips
cucumber slices
Mix the sour cream,
mustard, chutney, curry
power and orange juice
in a bowl until blended.
Stuff the pita pocket
with lettuce, chicken,
pepper strips and
cucumber slices.
Top with the curry
sauce. Enjoy!
Everyone who knows me knows I love curry so
it seemed right to make my first recipe
something with curry in it. This is easy to make
for an after school snack if you have the
ingredients ready to go ahead of time. You can
also substitute other vegetables like sprouts,
tomatoes, shredded carrots, onions, etc.
